When grilling direct (no heat deflector), raise the grid for foods that require rendering or need a little added protection from radiating heat. The chicken wings pictured is a great example. The wings were grilled, direct (no stone), high in the dome at an easy 375°F dome temperature - crispy, moist & delicious!
