The Big Green EGG 12" Pizza Stone provides a full-round ceramic baking surface for pizza, bread and other baked foods in the Medium EGG.

The 12" diameter provides a useful baking surface while still leaving room around the outside of the stone for heat and airflow to circulate through the grill.

Even Heat for Pizza & Baking

The hardened ceramic absorbs and distributes heat across the baking surface, helping cook pizza crust more evenly than placing food directly on a metal cooking grid.

Use the stone for pizza, bread, roasted vegetables and other foods that benefit from a heated ceramic baking surface.

Using Your Pizza Stone

For best results, use the pizza stone as the upper baking surface with a separate heat barrier positioned below it. An air gap between the lower deflector and pizza stone helps reduce concentrated heat on the bottom of the stone.

When your setup allows, use an expander or raised rack to lift the deflector and pizza stone higher into the dome. Moving the pizza setup farther from the gasket can help reduce exposure to concentrated heat.

Allow the stone to preheat with the grill. Use cornmeal or parchment paper between the dough and stone to help prevent sticking.

Pizza Setup & Air Gap

Position the pizza stone above a separate ceramic heat deflector with an air gap between the two surfaces.

The lower ceramic blocks concentrated direct heat from the charcoal while the elevated pizza stone provides the baking surface. This separation helps create more even stone temperatures during a pizza cook.

Maintain adequate airflow around the outside edge of the stone and make sure the stone clears the thermometer stem when positioned high in the dome.

Using Ceramic Spacers

CGS Ceramic Spacers can be placed between the lower heat deflector and pizza stone to create the air gap needed for a two-layer pizza setup.

The air gap provides thermal separation between the two ceramic surfaces and helps reduce concentrated bottom heat reaching the pizza stone.

Spacers can also provide additional lift when the rack configuration allows, helping position the pizza stone higher in the dome.

Care & Maintenance
  • Do not use soap, detergents or chemical cleaners on the porous ceramic.
  • Do not clean the pizza stone in a dishwasher or submerge it in water.
  • Do not oil the stone.
  • Allow the stone to heat and cool gradually whenever possible.

For pizza, we recommend using a separate heat deflector below the pizza stone with an air gap between the two ceramic surfaces. This helps protect the baking stone from concentrated direct heat and promotes more even heating.

Why raise the pizza stone higher in the dome?

Raising the pizza stone moves the baking surface farther from the charcoal and closer to the heat circulating through the dome. It also moves the pizza setup farther from the gasket when the grill and rack system provide enough clearance.

Can I use soap to clean the pizza stone?

No. Ceramic is porous and can absorb soap and moisture. Allow the stone to cool and scrape away food residue as needed.
