CGS 14" ceramic half-moon heat deflectors and full-round pizza stones are designed for the CGS Medium Woo and Large Spider setups in several popular kamado grills.

Use one half-moon to create direct and indirect heat zones, combine a pair for full indirect barbeque cooking, or choose the full-round stone for pizza and baking.

Setting Up the Full-Round Pizza Stone

For pizza cooks, position the full-round pizza stone above a separate heat deflector with an air gap between the two ceramic surfaces. The lower deflector blocks direct heat from the charcoal, while the elevated stone provides the baking surface.

For more even heating, the pizza stone should generally be the same diameter as, or slightly smaller than, the heat deflector positioned below it. Avoid using a stone so large that it restricts airflow around the outer edge.

Use cornmeal or parchment paper between the dough and stone to help prevent sticking. Check the applicable CGS grill or rack-system page for the recommended placement, spacers and stone height.

Remember a Drip Pan

For barbeque cooks, we strongly recommend placing a stainless steel drip pan above the ceramic heat deflector. Ceramic is porous and can absorb grease and moisture over time. When trapped moisture is reheated, it can create steam within the ceramic and place additional stress on the stone.

Yes. Ceramic deflectors and pizza stones naturally darken as they are exposed to smoke and cooking residue. This change is normal and does not affect cooking performance.

Can I clean the ceramic with a high-heat burn?

We do not recommend aggressive high-heat cleaning burns. Scrape away loose debris and gently burn off residue at moderate temperatures. Using a drip pan helps prevent heavy grease buildup.
