High-Heat Cast Iron for Better Searing & Grill Marks

The Kamado Joe Round, Dual-Sided Cast Iron Sear Plate creates a serious high-heat searing setup for the Joe Jr., Classic Joe, and Konnected Joe.

Use it on the main cooking rack in the Joe Jr. or position it low on the Classic Joe and Konnected Joe Divide & Conquer system to get the heavy cast iron closer to the charcoal.

Heavy-duty cast iron absorbs and holds heat, creating the intense contact temperatures needed for deep searing, flavorful crust, and defined grill marks on steaks, burgers, chops, and other proteins.

Key Features & Benefits

  • Excellent Heat Retention: Thick 9.8 lb. cast iron stores substantial thermal energy and transfers it directly into the food.
  • Deep Browning & Crust: High direct heat promotes strong Maillard browning for better color, texture, and grilled flavor.
  • Dual-Sided Searing: Flip the plate to choose between thick or thin grill-mark patterns.
  • Joe Jr., Classic Joe & Konnected Joe Fitment: Use on the main Joe Jr. cooking rack or on the lowest Divide & Conquer level in the Classic Joe and Konnected Joe.
  • Pre-Seasoned Cast Iron: Ready to cook on right out of the box and develops a darker, more non-stick seasoned surface over time.

What You Can Cook

  • Steaks: Preheat thoroughly for strong contact heat, deep browning, and pronounced grill marks.
  • Burgers: Cast iron maintains high surface temperatures for fast browning and a flavorful exterior crust.
  • Pork Chops: Excellent for creating rich color and crust while cooking directly over the charcoal fire.

Fitment & Setup Tips

Joe Jr. 13.5-inch

We've found the fit sitting directly on the Joe Jr. fire ring to be extremely tight. Because cast iron expands when heated, placing it directly against the base shell risks binding or damaging the ceramics.

The cast iron grate measures 13.75 inches +/- 1/16 inch. If you want to use the grate at the top of the fire ring, we recommend measuring the inside diameter of your Joe Jr. base across the top of the fire ring before ordering.

For the Joe Jr., we recommend using the cast iron sear plate directly on top of the main cooking rack where the interior diameter is widest and the plate has plenty of clearance.

Classic Joe & Konnected Joe, 18-inch

The Classic Joe and Konnected Joe are especially useful setups for this sear plate. Each side of the round cast iron grate features three outer alignment ridges that catch the inside of the lowest ring on the Divide & Conquer system.

The alignment ridges center and stabilize the sear plate on the lower ring, creating a secure cooking surface low inside the firebowl. We like this setup because it positions nearly 10 pounds of cast iron much closer to the charcoal—ideal for high-heat searing, blackening, and strong grill marks.

Optimizing Your Cast Iron Cook

Pre-Cook Routine

Start with a clean cooking surface and apply a very light coating of cooking oil before adding your food. This helps reduce sticking—especially if food is flipped before it naturally releases—and makes post-cook cleanup much easier.

Center Your Cook

Cook toward the middle of the grill, where the charcoal bed is generally deepest and most uniform. This concentrates heat directly beneath the cast iron and produces a stronger, more even sear.

Move When Flipping

When it's time to flip, move the food to a fresh section of the cast iron. The first side pulls heat out of the metal, so moving to a fully preheated section allows the second side to sear just as aggressively.

Cast Iron Care

  • Allow the cast iron to cool down completely before handling.
  • Wash by hand with hot water and a soft brush.
  • Very mild dish soap can be used when needed.
  • Dry the cast iron completely immediately after cleaning.
  • Apply a very thin coating of cooking oil before storing to protect the iron from rust.

CGS Pro Tip: Cast iron can last for decades when properly maintained. After cleaning and drying, apply a thin coat of high-smoke-point oil and return the plate to the warm grill. As the grill cools down, it will bake in the oil and strengthen the natural seasoning layer.
