High-Heat Searing for Deep Grill Marks

The Kamado Joe Half-Moon Dual-Sided Cast Iron Searing Grate is built for cooks who prioritize heat retention and restaurant-quality sear marks.

Designed for the Divide & Conquer Flexible Cooking System, this heavy-duty grate excels at high-heat applications where standard wire grates fall short. Available in sizes tailored for Classic Joe, Konnected Joe, and Big Joe grills.

Primary Uses & Benefits

  • Dual-Sided Searing: Features two distinct bar profiles—flip between wide bar surfaces for thick, defined sear lines or narrower bars for traditional grill marks.
  • High-Heat Conduction: Thick cast iron absorbs and holds substantial thermal energy, making it the ideal choice for steaks, chops, and burgers that require a deep, flavorful crust.
  • Multi-Zone Versatility: Pair with a stainless grate, half-moon soapstone, or heat deflector on the opposite side to create a versatile multi-zone setup within your Divide & Conquer frame.
  • Pre-Seasoned Performance: Ready to cook on right out of the box and continues to build a darker, naturally slicker surface with every cook.

Optimizing Your Cast Iron Cook

For a proper sear or blackened finish, cast iron needs to absorb serious heat. At CGS, we recommend positioning cast iron lower in the Divide & Conquer system close to the fire whenever possible.

Getting the grate closer to the coals lets the fire work more efficiently, delivering stronger direct contact heat without requiring you to run the entire grill excessively hot.

Pre-Cook Routine

Start with a clean surface, then apply a very light coating of cooking oil before adding your food. This helps prevent sticking—especially if food is flipped before naturally releasing—and makes cleanup much easier.

Give It Time to Preheat

Cast iron has significant thermal mass. Allow the grate to thoroughly preheat in the grill so it can transfer maximum energy into your proteins instantly.

Center Your Cook

Cook toward the middle of the firebowl where the charcoal bed is deepest and most uniform for consistent heat delivery across the entire grate.

Move When Flipping

When flipping, move your food to a fresh, fully heated section of the cast iron. The first side absorbs heat from the metal, so shifting to a new spot ensures the second side sears just as aggressively.

Technical Specifications

Cast Iron Care

  • Allow the grate to cool down completely before handling.
  • Wash by hand with hot water and a soft brush or scraper.
  • Mild dish soap can be used when necessary.
  • Dry completely immediately after cleaning.
  • Apply a thin layer of cooking oil before storing to protect against rust.

CGS Pro Tip: After cleaning and drying, apply a thin coat of high-smoke-point oil (like grapeseed or canola) and place the grate back onto the warm grill as it cools down. This bakes the oil into the iron and strengthens the protective seasoning layer for your next cook.
