Choosing the Right Wok Size

Our top recommendation for the Summit Kamado is a 16-inch carbon steel round-bottom wok. It provides plenty of cooking surface for family-sized meals while remaining lightweight, responsive to temperature changes and relatively easy to store.

The Spider can accommodate larger woks up to approximately 20 inches, but the added size and weight can make them more cumbersome to handle and store between cooks. For most Summit Kamado owners, the 16-inch wok offers the best balance of capacity and control.

Tips for Wok Cooking on the Summit Kamado

High-heat wok cooking moves quickly. Build a strong, even-burning direct fire—similar to the fire you would use for searing steaks—and allow the wok to heat thoroughly before adding food.

Prepare and organize all ingredients, sauces and cooking tools before placing the wok over the fire. Once cooking begins, there usually is not enough time to stop and chop the next ingredient.

1. Can the wok get hot enough?
Answer: Yes! In kamado-style grills, heat is never a problem. All you need is a reasonable "steak fire"—a spread-out, even-burning charcoal bed that generates plenty of high heat for true wok cooking.

2. Why wok outside?
Answer: Wokking outdoors keeps the high-heat grease splatter, smoke, and lingering cooking smells completely out of your house. Once you start cooking in the open air, you will find it much easier, cleaner, and far more enjoyable.
