Best Set-Up for Control
Use with a CGS Spider for full access to the wok — and, most importantly, the handles:
- Legs down – drops the wok closer to the fire for maximum heat.
- Legs up – raises the wok for easier, safer handling (our top recommendation).
To wok, all you need is a steady, even-burning fire — the same fire you’d use for grilling steaks.
Pro Tip: Avoid large expanders, as their top ring can interfere with safely handling a hot wok.
Helpful Add-Ons You’ll Love
- Wok Rack – holds wok steady (not for use over fire).
- Palmyra Wok Brush – natural bristles for round bottoms.
- Cooking Tools – use round skimmer and wood spoon to preserve seasoning.
Seasoning & Care Tips
Before first use:
- Wash off the protective oil with warm, soapy water.
- Dry thoroughly, then season just like cast iron.
After each cook:
- Rinse with hot water and scrub with a wok brush — avoid soap.
- Dry completely, then lightly spray with aerosol oil (like Pam).
- Store upside down inside your kamado while it cools down — the residual heat helps reseason the wok naturally.
