Two-Zone & Indirect Cooking for the Medium Big Green EGG

Big Green EGG pairs the 12" Dual Zone Deflectors with the Medium Dual Zone Basket. Use one deflector to create direct and indirect cooking zones, or combine two deflectors for full indirect barbeque, roasting and smoking.

The split design gives you more flexibility than a single full-round deflector by letting you control how much of the fire is blocked for each cook.

Other Compatible CGS Setups

The 12" half-moon deflector can also be used in select CGS Woo and Spider setups for the Small and MiniMax Big Green EGG.

Do I Need Two Deflectors?

For full indirect cooking, yes. Two deflectors provide full heat protection for smoking, roasting and low & slow barbeque. Use one deflector when you want direct and indirect cooking zones at the same time.

One half-moon: Use one deflector when you want to create direct and indirect heat zones in the same cook. The ceramic blocks direct heat on one side while leaving the other side exposed to the charcoal.

Two half-moons: Combine two deflectors when you want full indirect coverage for smoking, roasting and low-and-slow barbeque.

Using the Split Deflector for Pizza Setups

The 12" half-moons can be used as a lower heat barrier in compatible pizza setups. Position a separate pizza stone above the deflectors with an air gap between the ceramic layers.

The lower ceramic blocks concentrated direct heat from the charcoal, while the elevated pizza stone provides the baking surface. The air gap helps moderate stone temperature and promotes more even heating.

Use cornmeal or parchment paper between the dough and pizza stone to help prevent sticking.

Using a Drip Pan

For barbeque cooks, we strongly recommend placing a stainless steel drip pan above the ceramic heat deflector.

Ceramic is porous and can absorb grease and moisture. Reheating trapped moisture can create steam inside the ceramic and place additional stress on the stone.

Using a drip pan helps keep grease off the deflector and makes cleanup easier.

Benefits of Ceramic Spacers

CGS Ceramic Spacers create an air gap above the ceramic heat deflector and can improve several setups:

  • Under a drip pan: Helps reduce scorching and burnt drippings
  • Under a pizza stone: Creates thermal separation between the lower deflector and baking stone
  • For added lift: Helps position a pan or stone higher when the rack configuration allows

Care & Maintenance
  • Do not use soap, detergents or chemical cleaners on the porous ceramic.
  • Do not clean the ceramic in a dishwasher or submerge it in water.
  • Scrape away food debris and gently burn off remaining residue at moderate temperatures as needed.
  • Use a drip pan to help protect the ceramic from grease buildup.
  • Avoid aggressive high-heat cleaning burns.
  • Allow the ceramic to heat and cool gradually whenever possible.
  • Expect the natural ceramic surface to darken with normal use.
Frequently Asked Questions

What is the difference between the convEGGtor and Dual Zone Split Deflectors?

The convEGGtor provides a traditional full indirect setup using a single ceramic piece with legs. Dual Zone Split Deflectors use a metal rack and let you use one or two deflectors, depending on what's cooking.

Will this fit the Small or MiniMax Big Green EGG?

The 12" half-moon can be used in select CGS Woo and Spider setups for the Small and MiniMax EGG, but clearance is tighter than in the Medium EGG. Check the applicable CGS rack-system page before ordering.

Will the ceramic darken with use?

Yes. Ceramic heat deflectors naturally darken as they are exposed to smoke and cooking residue. This change is normal and does not affect cooking performance.

Can I clean the deflector with a high-heat burn?

We do not recommend aggressive high-heat cleaning burns. Scrape away loose debris and gently burn off residue at moderate temperatures. Using a drip pan helps prevent heavy grease buildup.
