Multiple Ways to Grill Direct on a Raised Grid
Large EGG Grid atop the Rig
17 HD Grid inside the Rig on 3 Levels
Grill Atop the Rig: Ideal height, approximately 1-1/2 above the felt line to Render, Roast or Slightly Char with cooks in the 325°F to 425°F range. Render spatchcock chicken, Roast veggies (corn), Slightly Char Sausage (brats)
Grill at the 3 Notch Levels: Match grid height and cook to fire. Grill closer to the fire on cooks that can withstand more heat. And, if you miss on the fire, go up or down to compensate. Upper notch level is just below the felt line.
Big Plus with Rig's Middle & Lower Levels: Ideal grid heights for burgers - anything you need to flip with turners and grill hot. Elevating a bit makes it much easier to get turners under the burgers and still get the heat to char. Also, the 2 levels are ideal for grilling on planks. No other rack gives you two grid height options between the fire ring and felt line.

Top Rig ~ 1-1/2" above felt line,
Upper Rig Level ~ just below felt line,
Middle Rig Level ~ halfway between felt line & fire ring,
Lower Rig Level ~ 1-1/2 inches above fire ring.
With the 17 HD Grid, you are not losing cooking area, as the Grid's diameter is still bigger than the inside diameter of the fire ring.
Rockin' Two Zone Grilling
Proper way to grill with 2 zones: direct (hot) and indirect (protected)
Direct (Hot): Go Full Grid Below. It just makes sense to grill in the middle of the EGG where the grilling area is greatest and temperatures are most consistent. No reason to step down to a half grid, lose half the premium grilling area and be pushed to the edge where temperatures fluctuate.
Indirect (Protected): Go Half Grid & Deflector Above. Most of the time, the indirect part is at lower temperatures to hold food or slow cook times. To us, it makes sense to go up with the Indirect set-up, get away from the fire, and not interfere with the higher temperature, searing cook.
Half Stone Deflector: It's one of the 16 Deflectors used for BBQ. The Half Stone Hanger holds it directly under the Half Grid; hence protection is greatest and temperature control is most consistent. Cool option - you can slide the Stone in & out during the cook: Just remember hand protection.
Keys to the Set-up:
- Half Grid/Stone is set to the back of the Rig/EGG, providing easy access into the Rig. The opening between the front brackets is 13 inches.
- At 6 inches tall, the Rig is tall enough so the lower grid is accessible.
- Rig set-up easily lifts in & out: lift by Rig's top ring.

Bottom Grid: Large EGG Stainless Grid, CGS' 18 Large HD Stainless Grid or EGG's Cast Iron Grid work.

Large EGG Stainless Grid is the one that came with your EGG. EGG Cast Iron Grid is part # 122957. CGS' 18" Large Big Green EGG Heavy Duty Cooking Grid is a heavy duty stainless grid.
Even More Direct & Indirect Options
No system matches the Rig when it comes to direct and indirect abilities. Here are 4 more options that take advantage of height, grid and deflector placement.
1. Divide High atop Rig: Key is having the 16 Diameter Half Stone directly under the Large EGG Grid. No other system matches this raised grid protection.
2. Stairstep the Grids: Use 17 Head Duty and 9x18 Half Grid. 16 Half Stone sits backside on 17 HD Grid.
3. Mid-Level: Go 16 Half Stone under the 17 HD Grid. It's an enjoyable way to manage fire and temperature on small cooks and varying heights.
4. Stairstep & Half Stone Hanger: Similar to other Stairstep (2) except the Half Stone Hanger holds the 16 Deflector. Now you can move the 17 HD Grid independently of the 16 Deflector. Can still slide the 16 Deflector in and out during the cook - remember hand protection.

Smokin' Low & Slow BBQ

Grid atop Rig: Large EGG Stainless Grid or CGS' 18 Large HD Stainless Grid
Combo Parts:
- Grid at Levels: 17 HD Stainless Grid
- Indirect Deflector: 16 Half Moon Ceramic Stones
- Drip Pan: CGS' 16 Inch Stainless Drip Pan
Large EGG Stainless Grid is the one that came with your EGG. CGS' 18" Large Big Green EGG Heavy Duty Cooking Grid is like the 17 HD Grid, just bigger.

Single Grid: Pick your grid position for BBQ:
- Large EGG Grid atop the Rig for ribs, spatchcock chicken and sausage.
- 17 HD Grid at Upper Rig level for pork butt, brisket - the chunky meats.
Heat Deflector: The two 16 Half Stones provide big indirect coverage. The most common Deflector placement is the Rig's Lowest level. 16s provide bigger protection than EGG's ConvEGGtor. Key is elevating the 16s above the fire ring. The Lowest Rig level puts the bottom of the 16 Deflectors 1-1/4 inches above the fire ring.
Stainless Drip Pan: Protect the Deflectors from meat drippings with CGS 16 Stainless Drip Pan, ideal match to Deflectors. Most folks preferred to elevate the Drip Pan above the Deflector which is easy to do. Go high with the Pan for the best chance to reuse the drippings. Foil the Pan for easy clean up. Using all 3 Rig levels at once will require a third set of Crossbars.
Two Grids: Big meats go up top and skinny meats go below....or multiple racks of ribs. 17HD Grid sits atop the Drip Pan.
** More Options: Depending on your needs, you can move up with the Deflectors.
Specialty Cooks:
Popular Reverse Sear and Pizza

Reverse Sear Steaks: If you are grilling 2-4 steaks, roll the with Half Grid, Half Stone and Large EGG Grid set-up - same as 2 zone grilling above. This way you won't have to handle anything other than the steaks.
If you are grilling a bunch of meat, then roll with the BBQ set-up using the 17 HD Grid, 16 Deflectors and Large EGG Grid under the Rig. With this, when you are ready to sear, remove the Rig (17 HD Grid and Deflectors come with it) and sear with the Large EGG Grid that is already in place under the Rig.
For the searing grid: Large EGG Stainless Grid is the one that came with your EGG. Can also use EGG's Cast Iron Grid (122957) or CGS' 18" HD Large Stainless EGG Grid is similar to the 17 HD, just bigger.
