Two-Zone & Indirect Cooking for Kamado Joe Classic Grills
The Kamado Joe Classic 15" Ceramic Half-Moon Deflectors work with the Divide & Conquer Flexible Cooking System to shield food from direct charcoal heat and create controlled indirect cooking zones.
Use one deflector for direct and indirect cooking at the same time, or combine the pair for full indirect barbeque, smoking, roasting and baking.
Designed for the Divide & Conquer System
The half-moon shape matches the split layout of the Kamado Joe Divide & Conquer system, allowing each side of the grill to be configured independently.
With one deflector installed, one side remains open to direct charcoal heat while the other side is protected for indirect cooking. Install both deflectors when you want broad indirect coverage for brisket, ribs, pork butt, poultry and other low & slow cooks.

Recommended Barbeque Setup
For longer barbeque cooks, CGS recommends positioning the deflectors low in the Divide & Conquer system while keeping them raised above the charcoal.
The Kamado Joe Accessory Rack provides a convenient lower position for the deflectors. Raising the ceramic out of the firebowl helps maintain airflow around the charcoal while keeping the heat shield well below the food.
For a complete barbeque setup, add a drip pan above the deflectors and use CGS Ceramic Spacers to create an air gap between the hot ceramic and the pan.

Do I Need Two Deflectors?
Yes, for full indirect cooking. Use both deflectors when you want broad heat protection for smoking, roasting and low & slow barbeque.
One half-moon: Use one deflector when you want direct charcoal heat on one side and indirect cooking on the other.
Using One Deflector for Two-Zone Cooking
A single half-moon deflector lets you run direct and indirect cooking zones at the same time.
The open side receives direct heat from the charcoal for grilling and searing, while the deflector shields the opposite side for gentler indirect cooking.
This setup is useful for reverse searing, chicken, vegetables and cooks where you want an easy place to move food away from direct heat.
Using Two Deflectors for Low & Slow Barbeque
Install both ceramic half-moons when you want a traditional full-indirect setup.
The ceramic shields the food from direct radiant heat coming off the charcoal while allowing hot air and smoke to circulate around the cooking chamber.
This setup works well for brisket, pork butt, ribs, whole chickens, turkey, roasts and other longer indirect cooks.
Where Should the Deflectors Sit?
For barbeque cooks, CGS recommends supporting the deflectors on the Kamado Joe Accessory Rack at the lower level of the Divide & Conquer system.
Keeping the deflectors above the firebowl provides room for air to move around the charcoal while maintaining good separation between the fire and food.
The exact position can vary depending on the Divide & Conquer rack version and the rest of the cooking setup.
Using a Drip Pan
For barbeque cooks, we strongly recommend placing a stainless steel drip pan above the ceramic heat deflectors.
Ceramic is porous and can absorb grease and moisture. Reheating trapped moisture can create steam inside the ceramic and place additional stress on the deflector.
A drip pan helps keep grease off the ceramic, reduces buildup inside the grill and makes cleanup easier after long cooks.
For easier cleanup, line the pan with foil in an overlapping + pattern.
Benefits of Ceramic Spacers
CGS Ceramic Spacers create an air gap between the ceramic heat deflectors and drip pan.
- Under a drip pan: Helps reduce scorching and burnt drippings
- Thermal separation: Reduces direct radiant heat transfer from the ceramic into the pan
- Added lift: Helps position the drip pan higher when the rack configuration allows
On two-tier Divide & Conquer systems, the spacers are an easy way to separate the drip pan from the deflectors.
On three-tier systems, you may also be able to use a second Accessory Rack above the deflectors to support the drip pan.
Care & Maintenance
- Do not use soap, detergents or chemical cleaners on the porous ceramic.
- Do not clean the deflectors in a dishwasher or submerge them in water.
- Scrape away loose food debris after the ceramic has cooled.
- Use a drip pan to help protect the ceramic from grease buildup.
- Avoid aggressive high-heat cleaning burns.
- Allow the ceramic to heat and cool gradually whenever possible.
- Expect the natural ceramic surface to darken with normal use.

Do I need both deflectors for brisket, ribs or pork butt?
Yes. Use both 15" half-moons when you want full indirect coverage for traditional low & slow barbeque.
Why use an Accessory Rack for the deflectors?
The Accessory Rack supports the ceramic lower in the Divide & Conquer system while keeping it raised above the charcoal for better airflow around the fire.
Should the drip pan sit directly on the deflectors?
We prefer an air gap between the ceramic and drip pan. CGS Ceramic Spacers help reduce radiant heat reaching the pan and can minimize burnt drippings during long cooks.
Will the ceramic darken with use?
Yes. Ceramic heat deflectors naturally darken as they are exposed to smoke and cooking residue. This is normal and does not affect cooking performance.
Can I clean the deflectors with a high-heat burn?
We do not recommend aggressive high-heat cleaning burns. Scrape away loose debris and gently burn off remaining residue at moderate temperatures as needed.
