Product Description
12-Inch Ceramic Pizza Stone for the Medium Big Green Egg
The Big Green Egg 12-inch Ceramic Pizza Stone provides a full-round baking surface for pizza, bread, and other baked foods. Made from hardened firebrick ceramic, the stone absorbs and distributes heat to help bake pizza crusts evenly.
Designed primarily for the Medium Big Green Egg, its 12-inch diameter provides a useful baking surface while leaving room around the stone for heat and airflow to circulate through the grill.
Even Heat for Pizza & Baking
The ceramic construction absorbs and distributes heat across the baking surface, helping produce evenly baked pizza crusts and consistent results when cooking with a properly configured indirect setup.
Use the stone for homemade pizza, bread, and other foods that benefit from a heated ceramic baking surface.
Big Green Egg 12-Inch Pizza Stone Fitment & Specifications
Recommended Grill Fitment:
- Medium Big Green Egg: Our recommended Egg size for this 12-inch pizza stone, providing a useful baking surface with adequate room for perimeter airflow.
- Large, XL & 2XL Big Green Egg: While the 12-inch stone can be used in these larger Eggs, we recommend a larger pizza stone to take advantage of the additional cooking space.
- Other Kamado Grills: May work in select setups where the 12-inch stone can be securely supported while maintaining proper airflow and dome clearance.
Small & MiniMax Big Green Egg: The 12-inch stone is too large for our recommended pizza setups in these grills. We recommend the CGS 10-inch Pizza Stone instead.

Recommended Pizza Stone Setup & Cooking Tips
For the best pizza results, use the baking stone as the upper cooking surface with a separate ceramic heat deflector positioned below it. Use CGS Ceramic Spacers to create an air gap between the deflector and pizza stone. This helps reduce concentrated bottom heat and promotes more balanced baking.
For best results, position the pizza stone at or above the top of the Egg's base. Raising the stone higher into the dome, when your setup allows, moves it farther from the charcoal and takes advantage of the heat circulating overhead.
CGS Pizza Setup Tips
- Use Indirect Heat: Position a ceramic heat deflector below the pizza stone to shield it from direct charcoal heat.
- Maintain an Air Gap: Separate the heat deflector and baking stone to reduce concentrated heat on the bottom of the pizza.
- Raise the Stone: When possible, position the pizza stone higher in the grill using a compatible rack system or ceramic spacers.
- Check Dome Clearance: Make sure the stone clears the thermometer stem and maintains adequate airflow around its outside edge.
- Preheat Thoroughly: Allow the stone to gradually heat with the Egg before placing pizza on the surface.
- Prevent Sticking: Use a light dusting of cornmeal or suitable parchment paper when transferring pizza dough to the stone.
Pizza Stone Care & Maintenance
Big Green Egg ceramic pizza stones are porous and require different care than stainless steel cooking grids or cast iron cookware.
- Do not use soap, detergents, or chemical cleaners on the ceramic.
- Do not submerge the stone in water or clean it in a dishwasher.
- Do not oil or season the ceramic surface.
- Allow the stone to heat and cool gradually to reduce thermal stress.
- Scrape away food residue after the stone has cooled.
- Avoid aggressive high-temperature cleaning burns.
- Expect the ceramic to darken naturally with repeated use.
Big Green Egg 12-Inch Pizza Stone FAQs
Which Big Green Egg sizes fit the 12-inch pizza stone?
The 12-inch pizza stone is best suited for the Medium Big Green Egg. It can also be used in larger Eggs with a properly supported setup, although a larger pizza stone is generally recommended to maximize baking space. For Small and MiniMax Eggs, we recommend the CGS 10-inch Pizza Stone instead.
Should I place the pizza stone directly over the charcoal?
For pizza cooking, we recommend using a separate ceramic heat deflector below the pizza stone, with an air gap between the two surfaces. This helps shield the stone from concentrated direct heat and promotes more even baking.
What is the recommended baking temperature for pizza?
CGS recommends a steady, evenly burning fire with a dome temperature around 500–550°F, similar to the fire you'd build for grilling steaks. Make sure the charcoal is burning evenly across the top to produce a consistent plume of heat rising into the dome.
Why raise the pizza stone higher in the Egg?
Raising the pizza stone positions the baking surface farther from the charcoal and closer to the heat circulating through the dome. It can also move the setup farther from the gasket area. Always make sure there is enough room around the stone and adequate clearance from the dome thermometer.
Can I use soap or water to clean the pizza stone?
Avoid soap, detergents, soaking, or submerging the stone in water. The porous ceramic can absorb moisture and cleaning products. Allow the stone to cool completely, then scrape away food residue with a suitable scraper or brush.
Will the pizza stone darken with use?
Yes. Ceramic pizza stones naturally darken as they are exposed to heat, smoke, and cooking residue. Discoloration is normal and does not affect cooking performance.
