Maximum Drip Coverage for Large Kamado Setups

Our 16" stainless drip pan is the go-to size for many standard large-class kamado setups, including the Large Big Green Egg, Kamado Joe Classic, Primo Large Round, Pit Boss 24, and Louisiana Grills 24 using large indirect cooking systems.

The 16" pan provides broad grease-catching coverage while still leaving room for heat and airflow to move around the pan. It is especially useful in large kamados with an 18" to 20" cooking grid and deflector setups in the 15" to 16" range.

Why Use a Drip Pan in a Kamado?

Ceramic heat deflectors absorb grease and moisture over time. During longer cooks, trapped drippings can burn, create unpleasant odors, and slowly stress the ceramic. Placing a 16" stainless drip pan above the deflector helps catch grease before it ever reaches the ceramic surface.

The 16" diameter provides maximum balance of wide grease coverage and essential edge airflow for large-class kamados. It is designed to provide the greatest coverage with the following grills and racking setups:

Why the Tapered Side & 1" Depth Matters

The 16" pan uses an engineered 1" tapered sidewall to help balance broad drip-catching coverage with airflow around the indirect setup. The smaller base matches the deflector diameter, while the wider upper rim expands outward for maximum collection. Because we do not recommend adding liquid during a kamado cook, taller sides are unnecessary and can hinder airflow.

How to Use & Clean

  • Double-Line with Foil: Overlap two sheets of heavy-duty foil in a “+” pattern before the cook for quick cleanup.
  • Extend Coverage: You can flare the foil slightly over the rolled rim to catch wide drippings without blocking edge airflow.
  • Expect Tarnish: It is 100% normal for stainless steel to smoke- and heat-tarnish inside a kamado. This doesn't affect performance. Designate this pan as your dedicated BBQ grill pan.
  • Dishwasher: If you choose to skip foil, a residential dishwasher will not remove the hardened, baked-on grease.

Should You Use Ceramic Spacers?

Whenever vertical clearance allows, we highly recommend using CGS Ceramic Spacers to create an air gap between your hot deflector and the drip pan. This drop in direct heat transfer minimizes the drippings from burning and producing acrid smoke.

Having the pan closer to the cooking grid is generally better than having it closer to the deflector.

Adjustable Rig Spacing Options

The CGS Large Adjustable Rig naturally creates advantageous spacing between your deflector and drip pan. Slide Guides or Crossbars can be used to position the pan higher or lower in the rig depending on the cook requirements.

This is one of the definitive advantages of the Adjustable Rig over fixed-position OEM rack systems—allowing you to easily elevate the pan high above the hot ceramic instead of letting it sit directly on the stones during long low-and-slow BBQ cooks.

Should You Add Liquid to the Drip Pan?

At CGS, we generally recommend not adding liquid during most BBQ cooks. Kamado grills retain heat and moisture incredibly well. Adding liquid unnecessarily spikes the humidity inside the cooker, which can severely **reduce bark formation** on brisket, pork shoulder, ribs, and other low-and-slow cooks.

What About Pans with Built-In Feet?

We prefer pairing the right pan with the right spacer configuration instead of relying on pans with built-in feet. Built-in feet sound convenient, but they rarely create much of an air gap between the pan and deflector, and they drive up the cost of the pan significantly.

A larger, adjustable air gap gives your drippings a better chance to stay clean, which matters for easier cleanups, fewer off-odors, or if you plan to save your drippings.

FAQs

Will a 16" drip pan fit my Large Big Green Egg?

Yes. A 16" drip pan is a strong match for many Large Big Green Egg indirect setups, including configurations using the Large ConvEGGtor, CGS Large PSWoo, CGS Large Woo, and CGS Large Adjustable Rig.

Will a 16" drip pan fit my Classic Kamado Joe?

Yes. A 16" drip pan works beautifully in Classic Kamado Joe setups above the firebox, including many Divide & Conquer indirect cooking setups.

Can this pan be used with other large kamado grills?

Yes. Many kamado grills with an 18" cooking grid utilize a 16" drip pan, including the Primo Large Round, Pit Boss 24, Louisiana Grills 24, and similar large-size kamados.

Should I use ceramic spacers with this pan?

Use spacers if your setup has enough vertical clearance. Spacers create a protective air gap between the deflector and drip pan to help reduce burnt drippings. If clearance is tight, place the pan directly on the deflector stone.

Should liquid be added to the drip pan?

Usually not. Kamado grills retain moisture naturally, and adding liquid can negatively affect your bark formation during low-and-slow BBQ cooks.

My pan turned dark after cooking. Is that normal?

Yes. Stainless drip pans naturally heat- and smoke-tarnish over time. This discoloration does not affect cooking performance and simply reflects a well-used pit.

The CGS Engineering Philosophy

A quick note on material choice: There is no practical reason to pay premium prices for 304-grade stainless steel on a drip pan. Because the pan will inevitably disfigure and tarnish from wood smoke, high heat, and animal fats, a higher grade of stainless offers zero performance benefit. This is a durable, utility part designed to save you money without compromising your cook.
