Indirect & Two-Zone Cooking for the Primo Oval Large

The Primo Oval Large Ceramic Heat Deflector Plates create a barrier between the charcoal and cooking grids, allowing you to configure your Oval Large for low-and-slow barbeque, roasting, baking, and two-zone grilling.

Use one ceramic plate to create separate direct and indirect cooking zones, or install both plates for broad indirect coverage across the Oval Large cooking area.

Choose Primo OEM or CGS Ceramic Deflector Plates

Choose genuine Primo OEM Ceramic Deflector Plates or save with CGS Ceramic Deflector Plates designed for the Primo Oval Large.

Both options feature the D-shaped design needed for the oval cooking area and are made to the same ceramic thickness. The CGS plates feature a longer straight edge and sharper corners, providing slightly more indirect coverage than the Primo OEM plates.

Primo OEM Ceramic Deflector Plates

Pair of genuine Primo OEM ceramic heat deflector plates for the Primo Oval Large grill.

CGS Ceramic Deflector Plates & Stainless Deflector Racks

Pair of CGS ceramic heat deflector plates supported by stainless deflector racks inside a Primo Oval Large grill.

Fitment & Requirements:

  • Compatible Grill: Primo Oval Large
  • Plate Options: Genuine Primo OEM or CGS ceramic deflector plates
  • Full Indirect Cooking: Requires two ceramic plates and two compatible deflector racks
  • Two-Zone Cooking: Requires one ceramic plate and one compatible deflector rack
  • Rack Requirement: Each ceramic plate must be supported by a compatible heat deflector rack

Important: Heat deflector racks are sold separately unless specifically included with the selected product option. The ceramic plates do not sit directly on the firebox.

How the Primo Heat Deflector System Works

Primo and CGS heat deflector racks hang below the cooking grids, supporting the ceramic plates above the charcoal. This creates a heat barrier that protects food from direct flame while allowing heat to circulate throughout the cooking chamber.

Install the deflector racks, place the ceramic plates into the racks, and position the cooking grids above them.

  • Low-and-Slow Barbeque: Use both plates for brisket, ribs, pork shoulder, poultry, and other longer cooks.
  • Two-Zone Grilling: Use one plate to create an indirect zone while leaving the opposite side open for direct grilling.
  • Roasting & Baking: Use both plates to create a more oven-like indirect cooking environment.

Setup Tips, Plate Differences & Care

Explore the sections below for additional information about deflector positioning, drip pans, ceramic spacers, Primo OEM versus CGS plates, and maintenance.

Where Should the Deflector Plates Sit?

The ceramic heat deflector plates sit below the cooking grids on compatible Primo or CGS heat deflector racks.

Each rack suspends its ceramic plate above the charcoal, providing clearance for indirect cooking while allowing heat to circulate around the plate.

Always install the ceramic plates in their supporting racks before positioning the cooking grids.

Using a Drip Pan

For low-and-slow barbeque, CGS recommends placing a drip pan above the ceramic heat deflector plates.

Ceramic is porous and can absorb grease and moisture. Reheating trapped moisture can create steam inside the ceramic and place additional stress on the plate.

A drip pan helps keep grease off the deflectors, reduces buildup inside the grill, and makes cleanup easier after longer cooks.

For easier cleanup, line the pan with foil in an overlapping + pattern.

Benefits of Ceramic Spacers

CGS Ceramic Spacers create an air gap between the hot ceramic heat deflectors and a drip pan or baking stone positioned above them.

  • Under a Drip Pan: Helps reduce scorching and burnt drippings.
  • Under a Pizza Stone: Creates thermal separation between the lower heat barrier and baking surface.
  • Additional Clearance: Helps position a pan or stone higher when the cooking setup allows.

Primo OEM vs. CGS Deflector Plates

Both options are designed for indirect cooking in the Primo Oval Large, but there are a few differences worth considering.

Primo OEM: Genuine Primo ceramic deflector plates designed for the original Primo heat deflector system.

CGS: A lower-cost alternative manufactured to the same ceramic thickness, with a longer straight edge and sharper corners that provide slightly more indirect coverage.

Both options are sold as a pair and require compatible heat deflector racks for support below the cooking grids.

Care & Maintenance
  • Do not use soap, detergents, or chemical cleaners on the porous ceramic.
  • Do not clean the plates in a dishwasher or submerge them in water.
  • Allow the ceramic to cool before scraping away loose food debris.
  • Use a drip pan to help protect the ceramic from grease buildup.
  • Avoid aggressive high-heat cleaning burns.
  • Allow the ceramic to heat and cool gradually whenever possible.
  • Expect the natural ceramic surface to darken with normal use and smoke exposure.
Frequently Asked Questions

Do I need two deflector plates for full indirect cooking?

Yes. Use both ceramic plates with their supporting racks for indirect coverage across the Primo Oval Large cooking area.

Can I use just one deflector plate?

Yes. One plate creates an indirect cooking zone while leaving the opposite side open to direct charcoal heat.

Do the ceramic plates sit directly on the firebox?

No. Each plate requires a compatible heat deflector rack that suspends the ceramic below the cooking grid and above the charcoal.

Are the heat deflector racks included?

Deflector racks are sold separately unless the selected product option specifically states that racks are included.

What is the difference between Primo and CGS deflector plates?

Primo plates are genuine OEM components. CGS plates use the same ceramic thickness but feature a longer straight edge and sharper corners for slightly more indirect coverage at a lower cost.

Will the ceramic darken with use?

Yes. Ceramic heat deflector plates naturally darken as they are exposed to smoke and cooking residue. This is normal and does not affect cooking performance.

Can I clean the plates with a high-heat burn?

We do not recommend aggressive high-heat cleaning burns. Scrape away loose debris and gently burn off remaining residue at moderate temperatures as needed.
